A Rare Traditional Japanese Brewing Technique

We use the Hanegi Shibori technique, whereby the fermented sake base is carefully placed into sake bags, then laid out within a large purpose-built frame.
A lid is placed on top, and an enormous wooden beam is suspended from the ceiling. Utilizing the weight of the beam and the delicate principle of leverage, the sake is gently and meticulously extracted under subtle pressure.

Our process lacks a manual; instead, our skilled artisans rely on their intuition to determine the pressing method and work hours.
