The brewery's philosophy
We strive to create authentic Japanese sake by pursuing only the taste. We do this through trial and error, adapting to the changing temperature, humidity, and brewing environment every year to seek even more delicious sake than last year.
Made by brewers,
loved by brewers
We simply seek to create sake that we believe is delicious, and the craftsmen produce the sake that they consider the best.
Small batch handmade sake
We adhere to small-scale production and complete handcrafting. We believe that good sake cannot be made without the involvement of human hands, and therefore, we do everything by hand without using any mechanical tools.
Brewed with the best water in Japan
We brew Daiginjo "The" with the softest water in Japan, known as the best groundwater in Japan, using the generous water resources unique to Japan. The sake is brewed with such softness that even drinking the water alone is an awe-inspiring experience.
